I’ve reached the third trimester but I’ve also reached the point where I really need to look after myself to keep my energy up. It’s tricky prioritising cooking for yourself when there’s a million other things to do. So the amazing Christianna, a nutrition student, food columnist and recipe creator from London – check out her fabulous instagram account @eathappyfeelgood – created this recipe for me.
Really quick, full of energy boosting ingredients and perfect for grabbing on the go. I love the fact that you can make a big batch of them and the toddlers love them too! So give them a try, here’s a little video of how I made them.
Oat and nut cereal bars
🔸1 cup (really full) pitted medjool
🔸1/4 cup natural peanut butter
🔸1/4 cup maple syrup
🔸1 tsp vanilla
🔸1 1/2 cup rolled oats
🔸1 cup flaked almonds
🔸Put the dates in a food processor and blitz till roughly blended and forming a dough
🔸Put the oats in a dry pan and toast by cooking over a medium heat for a few minutes. Shake the pan regularly to make sure they don’t burn. Set aside in a large bowl
🔸In a small pan over a low heat, combine the peanut butter, maple syrup and vanilla. When well combined add to the oats
🔸Add the almonds and blitzed dates and combine well. Hands work best for this
🔸Line a square baking dish with parchment paper and tip the mixture into it. Using your hands press firmly down into the dish making sure you go into the corners
🔸Put in the fridge to set for about 1 hour
🔸Cut into cubes and keep in the fridge for a few days or in the freezer for up to a month
