Another lockdown classic…Banana bread recipe!

I have found baking to be a nice activity to get Sophia involved in start to finish, she is so proud of the finished baked good she helped to make. It’s also really nice to break the week up a bit and make us realise the end of the week is here as our usual baking days are Thursdays/Fridays. This is a really quick, easy recipe and kids can join in for all of the stages (other than putting in the oven of course)

TOP TIP : It’s delicious on a Saturday morning while hubby has the kids and you can sit somewhere quiet with a cup of coffee. Tell your other half P&P says it’s one of the crucial steps to making it taste better πŸ˜‰

– 2 mashed bananas
– 1 Egg
– 100 ml of Maple Syrup ( I actually just free pour)
– 1 Tsp Vanilla Extract
– 1 Tsp Baking Soda
– Pinch of salt
– 3 Tbsp Melted Butter
– Handful of Chocolate chips

– Turn oven on 350 degrees and line a baking tray with parchment paper
– Add egg, vanilla extract and maple syrup to mashed banana in medium size bowl
– In another bowl add flour, salt, baking powder and baking soda
– Add wet ingredients and dry together and slowly sir in melted butter
– stir in chocolate chips
– Cook for 30-40 mins until skewer comes out clean.

Sprinkle demerara sugar on the top for extra crunch!
